These St. Patrick’s Day shamrock treats are like mini pots o’ gold!
Covered in green and gold sugar sprinkles, the shamrock cupcake toppers are ridiculously easy to assemble. Adorable cupcakes for your adult or family-friendly St. Patrick’s Day party.
What you need:
- 1 Box of your Favorite Cake Mix
- Cake Mate® Striped No-fade Baking Cups
- Cake Mate® Gold Sugar Sprinkles
- Cake Mate® Green Sugar Sprinkles
- White Icing
- Green Icing (with a small round tip)
- Mini Marshmallows
- Kitchen Shears
Step 1 – Bake cupcakes in the Striped Green No-fade Baking Cups. Let the cupcakes cool completely.
Step 2 – Frost the cupcake tops with white icing.
Step 3 – Spread out a small amount (about ¼ cup) of gold sugar sprinkles onto a plate. Holding the base of the cupcake, carefully turn the cupcake upside down and dip into the pile of gold sugars. Slowly rotate the cupcake until the entire top of the cupcake is covered with sprinkles.
Step 4 – Pour a small pile (about 1 tablespoon) of green sugars onto the plate. Take one mini marshmallow and lightly dip one side into water, then into the green sugars. Place on the cupcake using a small amount of green icing as “glue.”
Step 5 – Repeat Step 4 three more times to complete the marshmallow shamrock leaves.
Step 6 – Using the small round or writing tip, pipe a small stem from the leaves to complete the shamrock.
Little chefs will have fun helping you dip and cover the marshmallows in sprinkles. They can even assemble the shamrocks because they are just too easy.
I just used plain vanilla cupcakes, but these would be so cute on top of Guiness or Bailey’s infused chocolate cupcakes – like the Guiness and Bailey’s Irish Cream Cupcakes found here. I found these a little too late, but will be making them next year for sure!
